Whole Wheat Waffles for Two

On our days off, Mitch and I love to make these with the fabulous waffle iron we got for our wedding.  They’re a more healthy twist on typical waffles you might make from a mix.  I think I changed the recipe enough to post it here for you!

1 1/8 c. whole wheat flour

2 tsp. baking powder

dash of salt

1 egg

1 c. + 3 T. milk

1/4 c. vegetable oil (can also use applesauce for an even more healthy version!)

2 T. honey

1 T. vanilla

1 tsp. cinnamon

Turn your waffle iron on so it’s nice and hot for when you’re all done mixing.  Mix all of the ingredients together in a large mixing bowl.  Pour approximately 1/2 c. of mix (may vary depending on your iron) and cook thoroughly.  Serve hot with fresh blueberries or strawberries and/or maple syrup!  Makes approximately 4 waffles (enough so you can even save them for the next morning!)  Enjoy!
